Thermo Diet Caribbean Rice
- 1 tbsp coconut oil
- ½ each yellow onion
- 3 each garlic cloves
- 2 each chorizo links
- 14 ounces diced tomatoes
- 1 each jalapeno
- 2 cups jasmine rice
- 4 cups water
- 2 tsp thyme
- 2 tsp cumin
- 2 tsp turmeric
- salt and pepper
- Heat oil in a large skillet on medium. Add onion, garlic, jalapeno and chorizo. Cook until onions have softened and chorizo has browned.
- Add diced tomatoes, thyme, cumin, and turmeric. Stir to combine and then add dry rice. Cook for a minute to slightly toast the rice. Add the water and stir to combine.
- Bring to boil and then turn down to a simmer cover and cook for 20-25 minutes.
- Season with salt and pepper.
