Cilantro Lime Rice

A healthy energy-fueling carb with tons of flavor and nutrients all comes together in this amazing Cilantro Lime Rice recipe!

Ingredients

  • 1 tbsp coconut oil
  • cup yellow onion
  • 1 cup long grain white rice
  • ½ tsp garlic powder
  • 2 cup s chicken broth
  • 2 tbsp lime juice
  • ¾ cup cilantro
  • 1 tspcup lime zest
  • salt and pepper

Instructions

  • Heat coconut oil in a large pot on medium-high heat. 
  • Add onion and cook for about three minutes, stirring occasionally to prevent burning. 
  • Add in rice and garlic powder, stir together ingredients and let cook for about two minutes just to toast the rice slightly. 
  • Pour chicken broth and lime juice to the pot and stir to combine. 
  • Bring mixture to a boil, reduce heat to simmer, cover and cook for about 20 minutes.
  • When rice is completely cooked add lime zest, cilantro, and season well with salt and pepper.
